‘The Weed Gummies Cookbook’ is Perfect For Those Looking to Make Unique Edibles at Home
After a doctor-prescribed opioid cocktail failed to subdue a painful herniated spinal disk, author Monica Lo’s then roommate seemingly saved her life with a cannabis edible. As it turns out, the experience opened her world to an alternative approach to pain medication, one that provided holistic management and was easier on her system. It helped Lo get through her day-to-day tasks at a time where she struggled sleeping and getting out of bed.
“For the first time in a long time, I slept like a baby,” she says. “The next day, I found myself spending hours upon hours researching this plant and how to make my own infusions. Since we lived in a strict no-smoking building, I needed to be very discreet with the wafting scent of cannabis; this meant that using a Crock-Pot or cooking on the stovetop was not in the cards.”
At the time, Lo worked for a sous vide start-up as Creative Director, and came up with the idea to use the company’s machines for testing cannabis-infused recipes. It inspired her to create Sous Weed®, an educational blog started in 2015 to document her experiments.
Using the sous vide method, pronounced sue-veed, Lo found it easier to make healthier edibles with the best dosage for her needs. The name is fancy but the process was simple enough, incorporating an airtight bag by placing food inside and cooking it in a pot of temperature-specific water. Approaching it that way also allowed Lo to conceal the smell of cannabis from her strict landlord.

She compiled a collection of practical recipes specifically for people at various stages of their cannabis journey. Some of the weed-infused recipes include Sour Green Apple Gummies; Lavender Chamomile Sleep Gummies; Mocha Caramels and Honey Elderberry Lozenges. Inspired by her Taiwanese-American roots, Lo also created recipes using flavors like sweet and floral lychee as well as umami-packed miso.
