OC Wine Mart: Self-Serve Wine Bar Debuts in Irvine, CA

With an optimistic view on the local Orange County wine market, the less-than-1-year-old OC Wine Mart has opted to spend $50,000 on two new Italian-made, self-serving wine bars. These crazy machines keep wine in an oxygen-free environment after they are opened and will automatically measure out one-ounce sample pours for their customers. Reds are served at room temperature, whites pour out at 55 degrees fahrenheit; argon and carbon dioxide are injected into the bottle in order to prevent oxygenation and keeps the wine proper for up to three weeks.
