National Potato Chip Day — Here is an Ice Cream Sandwich for the Occasion

National Potato Chip Day is March 14th, but we got a preview from the Chunk-N-Chip food truck displaying how they plan to celebrate the national food holiday next week. Their trick? They plan to include potato chips on their ice cream sandwiches.

The picture featured is of two snickerdoodle cookies, sandwiching white chocolate fudge ice cream, topped with white chocolate-drizzled potato chips. Sounds like a phenomenal way to celebrate a holiday that commemorates such a historic and prolific snack item.

Follow the LA-based Chunk-N-Chip to get a taste for yourself! The item is reportedly available on Wednesday (the holiday), Thursday and Friday nights.
