I Turned My Del Taco Meal Into A Full-Blown Pie, Here’s The Hearty Result
When everything’s closed at 3Am, you just had a crazy night, and all you want is some burritos, Del Taco is your best friend. So to everyone who’s ended a memorable, or even forgettable night at the fast food joint, you’ll appreciate this recipe.
Our own Elie Ayrouth has a thing for baking with white-washed Mexican food, as evidenced with his gnarly, yet delicious Taco Bell lasagna, and this Del Taco Chicken Soft Taco Pie falls right into that same mold.
“I had the alliteration of “Chicken Soft Pie” in mind before I ever knew what the dish was gonna look like,” Ayrouth said. “My initial plan for it was going to be these mini pot pies, but I found the regular pie tin first.”
Just like Elie did with the Taco Bell lasagna, he recruited his roommate Matt to help put together this f*ckery, as he probably gave Elie one of those looks, like, “This again?”
For those who grew up in Southern California, you probably have a soft spot for Del Taco, even with an endless amount of choices for tacos in this state. You can be that guy who cries about it not being real Mexican food, but there’s probably still some good childhood memories that comes with Del.
“I grew up on Chicken Soft Tacos. After grade school on Tuesdays, my mom would take my brother and I to Taco Tuesday,” Ayrouth said.
So with nostalgia filling their hearts, they got to work. The two didn’t use one of those pre-made pie crusts. This was too important for that easy-bake bulls*it. They rolled their own dough, threw it on top of a pie mold then began stuffing that bad boy with the soft taco ingredients.
In deconstructing the soft taco, the guys put shredded cheddar cheese, shredded lettuce, Del Taco’s famous chicken, some of Del’s secret sauce, and even added Del Taco’s signature fries to the mix.
Of course the pie had to be latticed so you can see all the delightful cheesiness that’s filled within.
Not surprisingly, Elie said it tasted amazing. It actually worked as he said the, “… fries were a great balance to the moisture from the white sauce.”
