Deconstructed Carrot Cake

Qyel Antonio is a great photographer, and by the looks of it, equally as impressive in the kitchen. He just put us on notice that he has some amazing creations coming out of his Bakery and Pastry rotation in culinary school. One that caught our eye was this deconstructed carrot cake dish, featuring a brown sugar spice cake, cream cheese mousse, carrot sauce, rum raisin ice cream and candied walnuts.
