Lowell Raven, a vice president and partner of AYYA Hospitality Group, and creator of Crust & Roux, shared that this groundbreaking idea all started with his father decades ago, “This was all inspired by a concept my dad used to have about 25 years ago. It’s all based on pizza pies, pot pies, and and dessert pies. So we took that inspiration, worked with our executive chef to elevate the the menu, elevate the ingredients, and create this gourmet pizza company.”

The gourmet aspect of Crust & Roux not only lives through the fine ingredients they use, but also the unique execution of their food.

Here, a white, buttery roux serves as the canvas for some of their pizzas, eschewing the traditional red sauce. Also, buttermilk is featured in their pizza dough, giving it heft and integrity, all while maintaining an airy and light crust from the use of top-notch Italian flour. Pot pies here go beyond the prerequisites of hearty and soulful by incorporating high quality ingredients into generous portions. Simultaneously, Crust & Roux’s dessert pies tug at grandma’s cape — expect their offerings to be latticed with mathematical precision and filled with substantial morsels of fruity freshness.
