The Greenburger — A Good Looking St. Patrick’s Day Veggie Burger

Celebrating St. Patrick’s Day with great food and beer is a must, and making food that’s green seems to be the go-to move for kitchen creatives this holiday. I mean, they already have green bagels at Bruegger’s, why not serve up a veggie-friendly green patty and put it in a burger? That’s what happened with this Greenburger, and we got the recipe to hold you down!

The burger’s creator, Karolina of the Sandwicherie blog, shares with us a recipe that she claims goes great with beer. Well, you had us at Sandwicherie my friend! We’ve been drinking beer since 9 a.m. this morning!

This scrumptious looking St. Paddy’s Day Green burger features a pan fried veggie-based green patty (think roasted baby spinach, chives, sun-dried tomatoes) topped with garlic aioli dressing on a Kaiser roll. Best believe we have the recipe. Enjoy:

The Greenburger

  • 3 cups of baby spinach
  • 1/4 cup freshly chopped chives
  • as much blue cheese as you wish
  • a few sun-dried tomatoes
  • an egg
  • 1 white onion
  • 3/4 cup ground almonds
  • 5-7 garlic cloves
  • 4 tbsp mayo
  • 2 tbsp freshly squeezed lemon juice
  • 2 Kaiser rolls
  • 3 tbsp butter

Melt some butter in a skillet.
Add diced onion and saute until lightly brown.
Add spinach and cook for a few minutes, stirring continuously, until the spinach has wilted.
Transfer spinach to a food processor and blend.
Add chives and almonds and blend again.
Transfer the mixture to a bowl. Add an egg. Season with salt and pepper.
Form burger patties and refrigerate for at least half an hour.

Roasted garlic aioli dressing:
Wrap a few cloves of unpeeled garlic in foil and bake for about 15 minutes at 180C.
Combine mayo, lemon juice and smashed garlic. Whisk together until smooth.

Fry pan spinach burgers for 1-2 minutes per side.
Place burgers on a toasted bun. Top with blue cheese, sun-dried tomatoes and aioli dressing.
