These Cupcakes Taste Like Your Favorite Mexican Food
Close your eyes and think of your favorite Mexican food. OK, now think of it in cupcake form. If you don’t know what that would look, or taste like, Viva Los Cupcakes is a cupcakery that can provide that visual as they’ve taken several favorites from the Mexican food world and cupcaked them.
In 2010 Karina Jimenez, owner of Viva Los Cupcakes, looked at the cupcake world around her and said she wanted to create something that would make her stand out.
“I needed to create something different,” Jimenez said. “I asked myself, ‘What do I know? What do I have experience in? I know — Mexican food!'”
Realizing the cupcake world was void of Mexican flavors and tradition, she went nuts in the kitchen and created cupcakes with the familiar flavors she grew up with, such as horchata, cajeta and even tamales.

Churro Con Cajeta
The Churro Con Cajeta is a cinnamon vanilla cake filled with cajeta, which is a Mexican caramelized spread. It’s then and topped with cinnamon sugar.

Horchata
This cupcake is modeled after the popular milky, cinnamon-filled drink that’s popular in Mexican culture. It’s a cinnamon rice cake with horchata buttercream frosting, sprinkled with cinnamon.

Cafe de Olla
This one is a black coffee cake with cinnamon and piloncillo (raw cane sugar pressed into a cone shape) crumb ribbons, topped with Cafe De Olla buttercream, a touch of dark chocolate and a coffee bean garnish.

Tamal de Mole
This one is the cupcakery’s specialty. It’s a sweet “tamale” corn cake with a mole topping that’s both sweet and a bit spicy. Jimenez realized tamales where essentially steamed cakes and firgured she could bake a cupcake version.

Tres Leches
The cupcake is inspired by the popular Mexican sponge cake that is dipped in three different types of milk. It’s a vanilla cake, moistened with a three milk sauce, topped with whipped cream and a cherry.

Chocolate Tres Leches (Seasonal)
This one is like their tres leches cupcake, but in chocolate form.

Arroz con Leche (Seasonal)
This cupcake is a specialty cupcake that was around for their cupcake of the month in May. It is inspired by the Mexican rice pudding dessert.

Conchitas and Pastel de Galletas Maria
The ones with pink frosting are inspired by Mexican sweet bread, while the colorful cakes in the middle are inspired by cakes made with the popular Maria cookies as the base.

Margarita
Based on the drink, this cupcake is a lime cake with tequila, and a tequila Margarita frosting. It has a “salted” rim, which is really sugar, and is topped with a lime, just like a Margarita.

Jamaica
Based on the hibiscus drink called Jamaica, this one is made with a sweet hibiscus flower cake, hibiscus vanilla buttercream, and is garnished with a dried hibiscus flower.

Champurrado
Based of the chocolatey drink, this cupcake is made with a light corn-chocolate cake, Abuelita brand chocolate, crumb ribbons, cinnamon, and is then topped with Abuelita buttercream frosting.
