This Food Contest Included Nacho Dishes Loaded with Fried Foie Gras Cubes, Beer-Marinated Beef and Kimchi Purée
Our friends at FWF threw down their second annual nacho cook-off, this time bringing back veteran DJ Dieselboy for a second shot at glory.
Looking to up the ante on the competition, the self-proclaimed nacho addicts pitted Dieselboy against three formidable chefs: Wylie Dufresne (wd~50, Alder), Michael Anthony (Gramercy Tavern), and Seamus Mullen (Tertulia, El Colmado).
The judging panel consisted of Top Chef Masters’ Francis Lam, Eatocracy’s Kat Kinsman, and Time Out New York’s Mari Uyehara — all “nacho scholars of the highest order.” Unsurprisingly, they boys delivered: Dufresne decked his chips out with fried foie gras cubes, Anthony rolled out beer-marinated beef nachos, and Mullen dressed his nachos with kimchi purée. Dieselboy held his own with tortilla chips covered in pork gravy and citrus frozen with liquid nitrogen.

Michael Anthony’s beer-marinated smoky beef nachos
Chips served with beer-marinated beef, grilled salsa verde, wild rice, shell beans, homemade ají dulce pickles, and Cabot cloth-bound cheddar.

Seamus Mullen’s “Próbiochos”
Flackseed-and-quinoa crisps with raw cow’s-milk cheese, kimchi puree, avocado-and-kefir puree, fermented cabbage, cilantro, and pickled peppers.

Chips with pork gravy, cheese sauce, pomelo-pip pico de gallo, grapefruit crema, smoked pickled jalapeño, cilantro, and lime.
