Sweet Potato Cake

I’m not a big fan of sweet potato in general, but this Sweet Potato Cake doesn’t look half bad! The base is a regular spice cake mix combined with pureed sweet potatoes. The frosting isn’t your old run-of-the-mill cream cheese ether, this baby is topped with coconut and pecan infused frosting! I think Sweet Potato just gained a few points in my book.
