DIY Alcoholic Dippin’ Dots: A Little Danger, A Lotta Booze
As we here at Foodbeast have iterated over, and over, and over again, there are few things greater on this earth than the combination of alcohol and sugar. It goes with cupcakes, candy, coffee, and, most recently, ice cream.
But this is Foodbeast. We’re progressive. We use the Internet. When plain old scrape-it-from-the-carton ice cream isn’t doing it for us, we turn to Dippin’ Dots. And then we add booze, because reasons.
This recipe comes to us from the brilliant folks at Gizmodo and D.C. beverage manager, Brennan Adams. In essence, it’s a boozy, made-from-scratch ice cream concoction flash frozen with a little liquid nitrogen (which, as Gizmodo warns, is action-movie-level dangerous, so be careful. No drinking on the job, folks) to make the tiny dots we know and love. Apparently, Adams was prepared to call his clever creation Drinkin’ Dots, but Dippin’ Dots killed our collective buzz and said no, so now they’re Cryo-Spheres, which is way cooler, anyway, no pun intended.
Gizmodo has the full recipe, instructions, and all the science-y stuff that goes along with it, in case someone forces you to justify your actions (as well as where to find liquid nitrogen, if you’re in the market), but here are the basics:
- Ingredients
- 2 cups sweet vermouth
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 3/4 cups sugar
- 2 teaspoons Angostura bitters
- 4 egg yolks
- 1/2 packet (1/2 tablespoon) gelatin
- 1/3 cup cold water
- 1/2 cup cold (refrigerated) rye whiskey
- maraschino cherries, for garnish
- Prep Directions
- Liquid nitro into a wide-mouth container
- Ice cream + booze mixture (softened) into a condiment container
- Ice cream + booze mixture into the nitro
- DON’T FREEZE YOUR FINGERS OFF
Just don’t eat your creation right away. Look how pretty they are! Remember the scene in A Christmas Story where the kid licks the metal pole and all hell breaks loose? This is like that, but you’d be ramming that pole down your throat and into your stomach. You just made your own boozy Dippin’ Dots. You can wait a second to enjoy them.
You’ve been warned.
