Make Up for Holiday Gluttony with these Cucumber Subs

This Cucumber Sub is an ingenious recipe from Make the Best of Everything that’s both airy and thankfully, yummy. Simply slice open a cucumber, scoop out the seeds and fill with your favorite deli meats and veggies. It’s a clever way to make your regular sandwich a bit lighter and to make up for the gluttony that is the holidays.

But who are we kidding, we know there’s still  a few days of 2012 left that you’re going to fill it with copious amounts of booze and leftover Christmas pie.  That’s what 2013 is for anyways, New Year resolutions and blah blah blah. Whatever, go make me a sammich.
