Man, the perfect snack in my mind for this Sunday! Watching some football with friends and a plate of these skins is already a touchdown in my book! Cheesy bacon potato skins start off with a hollowed out potato that has been stuffed with thick-cut bacon, shredded cheddar cheese, sour cream, green onions, and drizzled with salt and olive oil!
